Food Glorious Food!

Ok, so I've had a bad attitude this last month about cooking for some reason. I was doing really well, then I just started feeling like I was in a rut. It's alot harder now that I'm not eating any gluten, so I was letting that be my excuse for complaining. But this week I've decided that it's really sad and silly for me to feel annoyed with having to cook, when really I should be very grateful for the great food that I have available to me. Because really, when else in history have people had the kind of selection of food available to them year round and things from all over the world. So I'm trying lots of new recipes this week (quite a few meatless ones, rare in our house), and thought I'd share a couple I've made lately that were really delicious. I just made this Asparagus rice pilaf tonight and I'm having to hold myself back from eating more, because even though I'm full, it's so good I want to keep eating it.
Also I made this kettle corn last week, and it's one of my new favorite treats. Cheap and easy, can't beat that.
