We had a birthday party for my bestest friend Kate last Friday. It was fun to make a fancy lunch and have someone appreciate it! I made this yummy pasta http://thepioneerwoman.com/cooking/2009/03/pasta-with-roasted-red-pepper-sauce-groan/ It was sooo good. We also gave Kate a pedicure (we were all going to have one, but since we had too many small children running around, we ran out of time). Oh, and my inital plan for dessert was these cute little miniature cupcakes. They looked so adorable that I had to make them. Then as I was actually making the cake balls that you then dip into melted candy, I realized the huge mistake of it all. There is just something very wrong about mushing up a cake into crumbs, mixing frosting with it, and then rolling it into balls. I took one bite, and my suspicions were confirmed, gross!!! So I made some strawberry shortcakes instead, and gave the kids the overly sweet, mushy in the middle cupcakes. I hope you had a great birthday Kate!
